With summer right around the corner, I wanted to write this blog about healthy eating! Specifically I wanted to share some of my favorite ways to make healthy meals fast and some of my favorite recipe websites.  The quickest way I prepare a healthy meal is by using the slow cooker. Throw in frozen or fresh chicken and a jar of salsa and let it cook all day while you are at work. Viola! Instant healthy meal! If the chicken is frozen place the Crock Pot on high for 8 hours. If the chicken is fresh, place on low for 4 hours. Get a Crock Pot that switches to warm after it is done cooking and it will keep your meal warm until you are ready to eat it! My favorite healthy recipe site that includes crockpot cooking is Skinny Ms. Check it out! Also, it is time to start dusting off those grills and fire them up! Get some fresh fish of your liking, I prefer salmon, add some seasoning and put it on the grill with some fresh veggies!  Get creative and think fresh!
